Weekday Dinner



Weekday dinner, originally uploaded by noodlebowl.

Soba noodles in a peanutty gingery sauce garnished with a boiled egg, blanched carrots, cucumber, cherry tomatoes, radish and sauted bok choy. Sprinkle with furikake and sesame seeds to serve.

Sauce
1tbsp peanut butter
1 tsp tahini
Splashes soy
Splashes mirin
Grated ginger
1 tsp sugar

Sue, what a lovely meal that is. I do like your peanut-y, gingery, tahini sauce. I’m always intrigued and attracted to this kind of flexible, simple, light meal. I can imagine making it often, but it always being slightly different.

Nomnom! Healthy and vegetarian and packed with flavor - seems like a very nice meal.

So simple, yet so delicious! The tahini is a lovely addition.
