Sweltering Salads

The mercury hit 42c in Sydney yesterday. We were cloistered in our air-conditioned living room with all the doors and windows closed. Laptops and shorts on. I may have been born in warm climate but I think anything past 35c especially in dry Sydney is stretching the friendship.  I am however enjoying the summer fruits; peaches, nectarines, mangoes, plums. They are great on their own, with a bowl of ice cream/yoghurt and lately I’ve found - fantastic in salads. I am sitting now at my desk with a mixed leaf salad with capsicum, cherry tomatoes, ripped bocconcini and sliced nectarine with a light sprinkling of aged balsamic. D for Delightful. A great way to combine some fruit into your day. Other fruity salad suggestions: Thai Beef salad with mango, peach and parmigianno reggiano and rocket…. I am also rediscovering a host of cool salads for these hot summer days: Hiyashi Chuka - cold noodle salad with finely sliced cucumber, ham, egg, pickled ginger with a soy/rice vinegar dressing garnished with sesame seeds. Yum! Another noodle salad - Soba with cubed avocado and pickled ginger and seaweed garnish. Yum!  What’s your favourite summer salad?

yum. you’ve prompted some good ideas for dinner this week. i always forget the joys of cold Japanese noodle salads.

i like chicken with mango and any veggie you can find - shredded cabbage and cherry tomatoes work well. it also works with strawberries. and i can’t go past my vietnamese-style salads: shreds of chicken, carrot and cucumber with tonnes of mint, a few shallots and a generous douse of lime juice and fish sauce dressing.

My favorite would be watermelon and red onion.

Finely dice onion, roughly cube watermelon, toss it together and let it stand for a half hour in the fridge.

It is surprisingly tasty (I admit, the idea is a hard sell) - but it is a staple of the Bicknell Christmas.

Helen: Yummy. A good thai salad always goes down well

Eric: That sounds really tasty actually. I have heard of a watermelon salad with fetta and mint that sounds good too.
