Prime Angus Steer Day

We recently obtained half a cow Prime Angus Steer. Not any kind of cow. Grass fed beef from a smallish farm on the outskirts of the Southern Highlands. The cow  Prime Angus Steer was slaughtered on a Monday and butchered into different cuts for us to pick up on Saturday. We got to choose the different cuts and if they were sliced or left whole. 75kg of meat is really quite a lot!

We shared it with another couple but both our freezers are full to the brim. We’ve had to move some of the meat to an off-site backup i.e. mum’s freezer.

It is a little…’gruesome’ as this cow Steer was alive on Monday and now in our freezer cut into bits on Saturday. But, I think that’s the cold hard truth we have to face up to when choosing to eat meat. I am happy that this cow had a good long life doing what cows do naturally.

Cow  Day  Prime Angus Steer Day culminated in a celebratory BBQ where we tried a few cuts. It is truly delicious; not greasy yet full of flavour. The leftover sausages got made into this lazy breakfast of fritata with mint, fetta, tomato and coriander.

Maybe you should get a lamb next time. Would be smaller and fit in the freezer more easily. And lamb is yummy!

Unless of course you are forking out for “aged beef” (all the rage in the UK as it apparently improves the flavour and makes the meat more tender).

Caitlin: Aged beef just means it basically is hung for x amoutn of time. We could have aged our beef for up to 2 weeks at the butcher but due to time obligations, we chose to go get it sooner.

I applaud your efforts at sourcing quality ethical meats.

I would also like to see a photo of your freezer packed to overflowing with meat… but then i’m strange that way.
