Study Lunch
I haven’t been neglecting my challenge. Truly! I’ve been busy studying. Exams are tomorrow. Good time to blog as any.
I cooked up some freezer food on the weekend: some pumpkin/lentil soup and a ratatouille. The ratatouille has formed the basis of a 5 minute study lunch of ratatouille with a poached egg and a slice of toasted sourdough. Easy peasy and so satisfying.
Ratatouille: oven roast thick chunks of eggplant, 5 zucchinis, 1 capsicum, some fennel and garlic. Once roasted, add a tin of diced tomatoes and water. Roast some more. When done, pull out and add a 1 tin of cannelini beans. Done! It will form the basis of many great meals.
Poached egg: These instructions have me a confident poacher: Boil water in a saucepan. Add vinegar when water starts to boil. Crack egg into a tea cup or low coffee cup. Gently lower cup at an angle into boiling water and flick out the egg. Once poached, remove with a slotted ladle. Done. 2 minutes.
Toast: Slice. cut finger. put in toaster.
Most delicious eaten in the spring sunshine on the back step.
