I am not usually a fan of creamy soups or cold soups; this soup was both. As we were doing a series of small dishes, I was looking for something I could make ahead and was French. I used this recipe as a twist on the classic potato and leek. I halved the quantity to make a bit less. The soup was looking a bit too yellow after simmering for a bit so I added some of the zucchini skin for colour. It turned out well with pleasing flecks of green. I garnished with seared scallops and some fennel leaf fronds. I would not choose to have this as a meal on its own but it was delicious as a refreshing starter.
