I love eggs. There I said it. Behold the beauty: Fried quails egg on french toast with gruyere, double smoked ham and bechamel. Part of a french degustation dinner J and I cooked up.

I have to know - how tricky is it to crack a Quail egg and now get any shell? … aren’t they really tiny?

The membrane inside the egg is actually really thick and that makes it really hard to crack smoothly. If anything they are tougher than chicken eggs.
