Cheese Course: Fig Salami And Blue Cheese

It has been a while but I do need to finish the meal don’t I?

I saw this recipe in a Gourmet Traveller article about cheese. We all know that cheese is the fabric of society and must be used at all opportunities. This was too good an opportunity. It is essentially chopped dried figs, 1 tablespoon of vinocotto and pine nuts. You roll it up together into a log and store it in a dry spot for a few days and then into the freezer. I served it with some delicious blue cheese bought that day at the Orange Grove markets. It is a very impressive and unusual cheese board serving.
