A Trout Wearing Fancy Pants

Sometimes you feel like being a little bit more extravagant in your own kitchen. A beautiful weekend of gorgeous late winter sunshine, wearing summer shorts and sandals, mixing it up at Ferragosto at Five Dock looking at funny dogs and kids. It all gets under your skin and I guess a happy chef makes happy food.

Fancy Pants Trout

I wrapped a piece of ocean trout with parma ham, trimmed some asparagus and made a fresh salsa of cherry tomatoes, basil, chilli, avocado and red onion. The husband grilled the trout and asparagus to perfection. I assembled it. Obviously I’ve been watching too much lifestyle TV for I found myself obssesively cleaning the plates before serving.

And there you have it, serve with a bottle of Petaluma Viognier sold to you by an over zealous Vintage Cellar man. Toast to a lazy weekend of sunshine.
