Minestrone

When it comes to the end of the week and we haven’t gone grocery shopping, there are odds and ends sitting in tupperwares and vegetables wilting, I do enjoy doing a bit of a Chuck-In-The-Pot. With a few pantry staples, I managed to scrape together a rather handsome minestrone. According to Wikepedia, the minestrone was what the Roman armies went to war on, a hearty substantial dish made from leftovers. Mine is no different.

Two tins of tomatoes, a stock made from a ham bone in the freezer, one tin of beans, zucchini, carrots, beans, 3 tiny lamb and mint sausages, english spinach and farfalle. Interesting combination but agreaably hearty. I am certain it will go down a treat with some grated parmesan and a lovely slab of toasted spelt bread for dipping. That will have to wait for tomorrow though as we’re off to Tina’s for some equally hearty Bak Kut Teh! I am lucky aren’t I! Hope you are all enjoying your long weekend! Happy Birthday Queenie.
