The Polenta Beneath My Wings

Ahh these beautiful cool mornings, crisp afternoons with dappled sunlight, the chill in the night. Mmm I love it. What better to serve up than a heart warming casserole?

Sausage casserole is pretty damn easy, it just takes time to mingle in the oven. It takes time for chorizo and pork/fennel sausages to make small talk with the tin of mixed beans, discuss real estate with the springs of thyme, dance the tango with a glass of wine and voila the cherry tomatoes go pop - I’m ready!

Serve up with far too cheesy polenta simmered with garlic and chicken stock. Polenta is like the best cousin of mashed potato. I just love the texture of it, so dense yet creamy.

And now, its in your belly. Iron Chef Chinese has won again. There are dishes to be washed. There is the lounge room to tidy. But the feet are up and the eyes are drifting down. The pleasure of a Sunday sleep in awaiting.
